Were you born on a holy day? Has that made your life different? Tractate Beitzah is called "Egg" because it begins, "What do we do with an egg that was "born" (laid) on a holyday?" Another reason it may be called "Egg" explains why we put an egg on a seder plate.
Beitzah probes the main difference between a Shabbat and a Festival, that on a Festival cooking food is permitted, But what else does "cooking" allow?
This tractate, more than any other, is a debate between those who accept Hillel's and Shammay's ideas of holy days. If you have heard of these two rabbis, you may want to know more about how they differ.
And, speaking of eggs, there's a lot of other unusual stuff in Beitzah, like why we can eat eggs with milk and not worry about that being a case of eating milk and meat together.
